Carrot Cupcake
Yields 12-18 cupcakes
1 tsp baking soda
¼ tsp salt
1 stick butter, soft
1 stick butter, soft
1 tsp cinnamon
½ cup chopped walnut (optional)
2 large eggs (room temperature)
2/3 cup sugar (or honey)
¼ tsp vanilla
2/3 apple sauce
1 1/3 grated carrots
Preheat oven 350 degrees
- Cream the butter and sugar in a mixer.
- In a separate bowl mix dry ingredients (flour, baking soda, salt, cinnamon, walnuts).
- Add one egg at a time to the butter and suger mix. Then add vanilla.
- Add flour mix to the butter mix.
- Add, apple sauce to the butter/flour mix.
- Add, carrots to the butter/flour mix.
Bake 350 for 20-25mins
Allow to cool and make frosting (4oz room temp cream cheese and 1/4 cup butter beaten until smooth and then add up to 2 1/2 cups of powder sugar)
